Mediterranean Lentil and Salmon Grain Bowl with Lemon-Tahini

Ingredients
- 1/2 cup dry farro
- 1/2 cup cooked brown lentils
- 2 wild salmon fillets, about 5 ounces each
- 3 cups baby spinach
- 1 cup cherry tomatoes, halved
- 1/2 cup jarred roasted red pepper, sliced
- 2 tablespoons tahini
- 1 lemon, juiced
- 1 tablespoon extra-virgin olive oil
- 1 clove garlic, grated
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon black pepper
Method
- Rinse the farro and simmer in plenty of salted water for 20 minutes until tender but chewy, then drain.
- Meanwhile, season the salmon with salt and pepper and roast or pan-sear until just opaque at the center, about 10 to 12 minutes.
- Whisk the tahini, lemon juice, grated garlic, and 2 to 3 tablespoons water into a pourable dressing.
- Warm the cooked lentils and toss the farro with the olive oil.
- Build each bowl with spinach, farro, lentils, cherry tomatoes, and roasted red pepper.
- Flake the salmon over the top, drizzle generously with lemon-tahini, and finish with black pepper.
