Lentil & Bulgur Mujadara Bowl with Herb-Tahini and Charred Onions
A warm Levantine bowl of brown lentils and nutty bulgur crowned with deeply caramelized onions, cucumber-tomato salad, and lemony herb-tahini.
Why it works

Ingredients
- 1 cup dried brown or green lentils, rinsed
- 3/4 cup coarse bulgur wheat
- 3 large yellow onions, thinly sliced
- 4 tbsp extra-virgin olive oil, divided
- 1 tsp ground cumin
- 1/2 tsp ground allspice
- 3 tbsp tahini
- 3 tbsp fresh lemon juice (about 1 lemon)
- 1 small garlic clove, grated
- 1/2 cup chopped fresh parsley
- 1 cup cherry tomatoes, halved
- 1 Persian cucumber, diced
- Sea salt and black pepper to taste
Method
- Simmer the lentils in 3 cups water for 18 to 20 minutes until just tender but not mushy, then drain and reserve.
- Meanwhile, heat 2 tbsp olive oil in a wide skillet over medium heat and cook the sliced onions with a pinch of salt, stirring occasionally, for 25 to 30 minutes until deeply browned and jammy; set aside a third for garnish.
- Stir the bulgur, cumin, allspice, and 1 cup boiling water into the remaining onions in the skillet, cover, and let steam off the heat for 12 minutes, then fold in the drained lentils and season.
- Whisk the tahini, lemon juice, grated garlic, and 3 to 4 tbsp cold water into a pourable sauce; season with salt.
- Toss the tomatoes, cucumber, and parsley with the remaining 2 tbsp olive oil and a squeeze of lemon.
- Divide the lentil-bulgur base among bowls, top with the salad and reserved charred onions, and drizzle generously with herb-tahini.
