Ingredients

  • 1 can (400 g) chickpeas, drained and rinsed
  • 150 g fresh spinach (about 5 packed cups)
  • 1 can (400 g) crushed tomatoes
  • 1 small yellow onion, finely diced
  • 4 cloves garlic, thinly sliced
  • 2 tablespoons (30 ml) extra-virgin olive oil
  • 1.5 teaspoons ground cumin
  • 1 lemon, half juiced and half in wedges
  • 1/2 teaspoon fine sea salt

Method

  1. Warm the olive oil in a wide pan over medium heat and cook the onion until soft and translucent, about 5 minutes.
  2. Add the sliced garlic and cumin and stir for 1 minute until fragrant, keeping the heat gentle so the garlic does not brown.
  3. Pour in the crushed tomatoes and drained chickpeas, season with the salt, and simmer for 8 minutes until slightly thickened.
  4. Fold in the spinach a handful at a time and cook just until wilted, 2 to 3 minutes.
  5. Off the heat, stir in the lemon juice, taste and adjust salt, and serve hot with lemon wedges and a final drizzle of olive oil.
