Gently Poached Salmon over Kimchi Rice with Steamed Bok Choy

Ingredients
- 2 salmon fillets (about 140 g each), skin on or off
- 4 cups (960 ml) water for poaching
- 3 thin slices fresh ginger
- 1 scallion, halved, plus 1 extra sliced for serving
- 1.5 cups (280 g) cooked short-grain rice, warm
- 1/3 cup (60 g) cabbage kimchi, roughly chopped
- 1 tsp of the kimchi brine
- 4 heads baby bok choy (about 250 g), halved
- 1 tsp toasted sesame oil
- 1 tsp toasted sesame seeds
- 1 tsp low-sodium soy sauce or tamari (optional)
Method
- Bring the poaching water to a bare simmer with the ginger slices and the halved scallion, then reduce the heat so the surface barely trembles.
- Lower in the salmon fillets and poach gently for 8 to 10 minutes, until just opaque and flaking; lift out carefully and set aside.
- While the salmon poaches, steam the halved bok choy over simmering water for 3 to 4 minutes until the stems are tender-crisp and the leaves are soft.
- Fold the chopped kimchi and its teaspoon of brine through the warm rice off the heat so the cultures are not boiled.
- Divide the kimchi rice between two plates, lay the poached salmon on top, and set the steamed bok choy alongside.
- Finish with sesame oil, sesame seeds, the reserved sliced scallion, and a small drizzle of tamari if you like.
