Spiced Chickpea and Cauliflower Curry over Brown Rice
Tender cauliflower and creamy chickpeas simmered in a garlicky, ginger-warmed tomato sauce with cumin and turmeric, finished with wilted spinach and spooned over nutty brown rice.

Ingredients
- 2/3 cup (125 g) brown rice, dry
- 1 tbsp (15 ml) extra-virgin olive oil
- 1 small yellow onion (about 100 g), finely diced
- 3 cloves garlic, minced
- 1 tbsp (15 g) fresh ginger, grated
- 2 tsp ground cumin plus 1 tsp ground turmeric
- 1 can (400 g) diced tomatoes, no salt added
- 1 can (400 g) chickpeas, drained and rinsed (about 240 g)
- 1/2 medium head cauliflower (about 350 g), cut into small florets
- 2 packed cups (60 g) fresh spinach, roughly chopped
Method
- Cook the brown rice in plenty of water until tender, about 30 minutes, then drain and keep warm.
- Heat the olive oil in a deep skillet over medium heat and saute the onion for 4 to 5 minutes until soft, then stir in the garlic, ginger, cumin, and turmeric and cook 1 minute until fragrant.
- Add the diced tomatoes, chickpeas, cauliflower, and a splash of water, cover, and simmer 12 to 15 minutes until the cauliflower is tender, stirring occasionally.
- Fold in the spinach and cook just until wilted, then season to taste with salt and pepper.
- Divide the brown rice between two bowls and spoon the curry generously over the top.
