Seared Salmon over Roasted Beets, Arugula & Citrus-Pistachio Gremolata

Why it works

Beets and arugula are among the richest dietary sources of inorganic nitrate, which the body converts along the nitrate-nitrite-nitric-oxide pathway to nitric oxide, the signaling molecule that relaxes vascular smooth muscle and widens blood vessels, supporting healthy blood flow. Salmon delivers long-chain omega-3s (EPA and DHA) that support endothelial function and healthy triglycerides, while pistachios add L-arginine (an NO precursor) and the cocoa nibs contribute flavanols shown to improve flow-mediated dilation. Ingredients

  • 2 salmon fillets, skin-on (about 6 oz / 170 g each)
  • 3 medium beets (about 12 oz / 340 g total), scrubbed
  • 4 cups (about 3 oz / 85 g) baby arugula
  • 1 tablespoon plus 2 teaspoons extra-virgin olive oil, divided
  • 1 navel orange (zest of half, plus segments)
  • 3 tablespoons shelled unsalted pistachios, roughly chopped
  • 2 teaspoons cocoa nibs
  • 1 small garlic clove, finely minced
  • 1 tablespoon fresh flat-leaf parsley, chopped
  • 2 teaspoons red wine vinegar
  • Sea salt and freshly ground black pepper

Method

  1. Heat oven to 400 F (200 C). Wrap each beet loosely in foil, set on a tray, and roast 40 to 45 minutes until a knife slides in easily. Cool slightly, then rub off the skins and cut into 1/2-inch wedges.
  2. Make the gremolata: combine orange zest, chopped pistachios, cocoa nibs, minced garlic, parsley, and 2 teaspoons olive oil in a small bowl with a pinch of salt. Set aside.
  3. Pat the salmon very dry and season both sides with salt and pepper. Heat 1 tablespoon olive oil in a nonstick or stainless skillet over medium-high until shimmering.
  4. Lay salmon in skin-side down and press gently for 10 seconds. Sear undisturbed 4 to 5 minutes until the skin is crisp and releases cleanly, then flip and cook 2 to 3 minutes more until just opaque at the center. Rest 2 minutes.
  5. Toss the arugula and warm beet wedges with the red wine vinegar and a pinch of salt. Divide between two plates and tuck in the orange segments.
  6. Set a salmon fillet on each plate and spoon the citrus-pistachio gremolata generously over the fish and beets. Finish with a crack of black pepper.
