Why it works

Ingredients

  • 1.5 cups dried red kidney beans (rajma), soaked overnight, or 3 cans (15 oz) no-salt kidney beans, drained
  • 1 cup dry cracked wheat (dalia/bulgur)
  • 2 medium yellow onions, finely chopped
  • 4 medium tomatoes, pureed (about 2.5 cups)
  • 1 tbsp ginger-garlic paste
  • 2 tsp ground cumin, 2 tsp ground coriander, 1 tsp garam masala, 1 tsp turmeric, 1 tsp Kashmiri chili powder
  • 1 tbsp neutral oil
  • 1 tsp salt, plus to taste
  • 2 cups diced cucumber, tomato and red onion for the side salad, tossed with lemon juice

Method

  1. If using dried beans, pressure-cook the soaked rajma with 4 cups water and 1/2 tsp salt for about 20 minutes until very soft, or simmer 60-75 minutes; reserve the cooking liquid. If using canned, skip to the gravy.
  2. Rinse the cracked wheat, then simmer in 2.25 cups water with a pinch of salt for 12-15 minutes until tender and the water is absorbed; fluff and set aside.
  3. Heat oil, saute the onions until deep golden (8-10 minutes), then add ginger-garlic paste and cook 1 minute.
  4. Add all the ground spices and stir 30 seconds to bloom, then pour in the tomato puree and cook down 8-10 minutes until the oil separates and the masala darkens.
  5. Add the beans plus about 1.5 cups bean liquid or water; simmer 15 minutes, mashing a few beans against the pot to thicken. Finish with garam masala and salt to taste.
  6. Ladle the rajma over cracked wheat and serve with a generous scoop of the lemony cucumber-tomato salad.
