Method

  1. Cook the soba in a separate pot of boiling water per the package (usually 4 to 5 minutes), then rinse under cold water and divide between two deep bowls.
  2. In a wide pot, bring the broth to a gentle simmer with the ginger, garlic, and shiitake, and cook 5 minutes until the mushrooms soften.
  3. Whisk the miso paste with a ladleful of the warm broth in a cup until smooth, then stir it back into the pot; keep it below a hard boil to preserve the miso.
  4. Slide in the cod fillets and edamame and poach gently for 6 to 8 minutes until the fish is opaque and flakes easily.
  5. Add the bok choy for the final 2 minutes just until the stems are crisp-tender.
  6. Ladle the broth, cod, and vegetables over the soba, drizzle each bowl with sesame oil, and top with scallions, nori strips, and sesame seeds.
