Sunlit Orange and Kiwi Plate with Toasted Pepitas
Bright half-moons of sweet orange and tart green kiwi, glossed with lime and a whisper of maple, showered with warm, crunchy toasted pumpkin seeds and fresh mint for a refreshing, jewel-toned snack.
Why it works
Orange and kiwi are both dense in vitamin C, the cofactor the body needs to build and cross-link collagen that keeps skin firm, while their carotenoids and polyphenols help defend cells against oxidative stress. Toasted pumpkin seeds add zinc, which supports wound healing and skin-barrier repair, plus plant protein, magnesium, and unsaturated fat that slow the sugars and aid nutrient absorption. Together this whole-food pairing of vitamin C with zinc gives collagen synthesis and skin renewal what they need.
Reflects the fruit-forward, seed-and-plant-fat emphasis of Mediterranean and Blue Zones eating patterns, where diets rich in vitamin-C fruits, nuts, and seeds are consistently associated in large cohort studies with healthier aging and better skin outcomes.
Ingredients
- 2 medium navel oranges (about 260 g total), peeled and sliced into half-moons
- 2 ripe kiwifruit (about 150 g total), peeled and sliced into rounds
- 1/4 cup (30 g) raw pumpkin seeds (pepitas)
- 1 tbsp (15 ml) fresh lime juice
- 1 tsp (7 g) pure maple syrup
- 1/8 tsp flaky sea salt
- 6 fresh mint leaves, thinly sliced
- 1 pinch chili flakes (optional)
Method
- Toast the pumpkin seeds in a dry skillet over medium heat, shaking often, for 3 to 5 minutes until they puff and turn golden, then slide onto a plate to cool.
- In a small bowl, whisk together the lime juice and maple syrup to make a light glaze.
- Arrange the orange half-moons and kiwi rounds over two plates, overlapping the slices so the colors alternate.
- Drizzle the lime-maple glaze over the fruit, scatter with the toasted pumpkin seeds, mint, flaky salt, and chili flakes if using, and serve right away.
