Why it works

Ingredients

  • 2 whole-grain rye crispbreads (Nordic knäckebröd), halved
  • 1 medium cooked beetroot (about 100 g, vacuum-packed or roasted), diced
  • 2 tsp apple cider vinegar
  • 80 g smoked mackerel fillet, skin removed and flaked
  • 3 tbsp plain skyr or thick Greek yogurt
  • 1 tsp prepared horseradish (or 1/2 tsp freshly grated)
  • 1 tbsp chopped fresh dill, plus sprigs to finish
  • Freshly ground black pepper and a small pinch of flaky salt

Method

  1. Toss the diced beetroot with the apple cider vinegar and a pinch of salt; let it sit for 5 minutes to quick-pickle and brighten.
  2. Stir the horseradish and chopped dill into the skyr, then season with black pepper.
  3. Spread the horseradish-dill skyr over each rye crispbread half.
  4. Spoon the pickled beetroot over the skyr, then top with flaked smoked mackerel.
  5. Finish with a few dill sprigs, a grind of black pepper and a tiny pinch of flaky salt. Serve immediately so the rye stays crisp.
