Warm White Bean and Rosemary Smash with Crudites
A rustic warm smash of cannellini beans with garlic, rosemary, lemon, and a little parmesan, served with a generous pile of crisp raw vegetables for dipping.

Ingredients
- 1 can (15 oz / ~255g drained) cannellini beans, rinsed
- 1 tbsp extra-virgin olive oil
- 1 clove garlic, minced
- 1 tsp finely chopped fresh rosemary
- 2 tbsp fresh lemon juice
- 2 tbsp grated parmesan
- 3 medium carrots, cut into sticks
- 1 cucumber and 3 celery stalks, cut into sticks
- Salt and black pepper to taste
Method
- Warm the olive oil in a small skillet over medium heat, then add the garlic and rosemary and cook until fragrant, about 1 minute.
- Add the rinsed cannellini beans and a splash of water, and heat through for 3-4 minutes.
- Remove from heat and smash the beans coarsely with a fork or potato masher, leaving some texture.
- Stir in the lemon juice and parmesan, and season with salt and pepper; loosen with a little warm water if needed.
- Scoop into a bowl and serve warm with the carrot, cucumber, and celery sticks for dipping.
