Why it works

Walnuts are the richest nut source of alpha-linolenic acid, a plant omega-3 linked to lower systemic inflammation, and they supply polyphenols that support endothelial function. The 85% dark chocolate and tart cherries contribute flavanols and anthocyanins that improve blood flow and buffer oxidative stress, while beta-glucan fiber from oats moderates the glucose response so this stays a slow-burning snack rather than a sugar spike.

Ingredients

  • 120 g walnut halves, roughly chopped
  • 60 g rolled oats
  • 40 g 85% dark chocolate, chopped
  • 30 g dried tart cherries or dried blueberries, chopped
  • 2 tbsp honey
  • 1 tbsp extra-virgin olive oil
  • 1/2 tsp ground cinnamon, pinch of sea salt

Method

  1. Heat the oven to 175 C (350 F) and line a baking sheet with parchment.
  2. Toss the chopped walnuts and oats with the cinnamon and salt, then stir in the honey and olive oil until everything is evenly coated and clumping.
  3. Spoon the mixture into 6 small mounds on the sheet, pressing each together firmly so it holds as a cluster.
  4. Bake 12 to 15 minutes until golden and fragrant, then cool completely on the sheet so the clusters set.
  5. Once cool, press the chopped dark chocolate and dried cherries onto the clusters (or fold in just as they come out so the chocolate lightly melts to glue them), then store in an airtight jar.
